A two-day trip usually falls apart for one simple reason: people plan around what they want to do instead of what can only be done in a specific window. On this sun-drenched coast, that difference decides the whole trip.
The scheduling rule: the sun decides, not your preferences
Three activities on this trip only work in one specific window, and everything else has to be built around them:
Everything else — meals, check-in, theme parks, souvenir shopping — is flexible and should be slotted into the gaps, especially the 11am–3pm window, which isn't usable for outdoor activities anyway.
Day 1 — the afternoon belongs to the beach

Booking a 6pm dinner reservation. Sounds reasonable, but it eats the entire sunset window — the best part of the day, and one that doesn't repeat. Push dinner to after 7pm instead.
Day 2 — the morning is the best part
This is what makes the trip memorable, and it demands exactly one thing: getting up early.

If you can only keep one thing from the whole trip, keep the morning of day 2. You can swim anywhere; watching boats come ashore at dawn is something only this place gives you.

Budget: three costs and how they swing
Costs on this trip swing widely by season and choice of accommodation, so instead of one number that's easy to get wrong, look at three cost categories and how much each one swings:
